Homemade Seasoned Bread Crumbs

Herb Boule, locally made.
I have a confession; I am a serious hater of the bread ends, whether it be on a loaf of bagged bread or on a baguette I always, always give them to someone else or bypass them altogether and end up with them later on, staring me in the face. The other thing that happens at our house when it comes to bread, is, we always end up with half a loaf of artisan baked bread because there is only two of us and we can never eat a whole loaf before it gets stale, what to do?  Well I do a bunch of different things with stale leftover bread, but the easiest thing to do is, plop them into your food processor and make your own bread crumbs.  You can then have bread crumbs that are actually just bread...have you read the back of your bread crumb can (it contains a lot of weird stuff I would rather not eat). The other thing that is great about homemade bread crumbs is that they are so much cheaper than store bought and you can season them to suit whatever you are making!  An added bonus, if you buy whole grain or wheat breads you now have breaded your items with a high fiber and super nutritious breading that your toddler or any other picky eater won't even notice, oh yes food ninja!  Lastly, if you are using locally made bread then your bread crumbs have no packaging and didn't have to be shipped, thus no carbon footprint trail!!  I mean who knew making bread crumbs at home could make you feel like such hero!

Directions

Break bread into chunks and add to food processor.

Choose seasonings, 1 tsp each.
Add seasonings to bread crumbs and pulse.

Spread out on a cookie sheet and bake at 275 degrees F for
10-12 minutes or until lightly browned. Remove from oven and when cooled store in a ziplock bag in the freezer  until ready to use.
